Recipe collection news!

My mind is not completely here right now. Actually, it is a bit blurred by all the snot and sneezing I have going on. Heck, my right side lymph node in my neck is majorly swollen too! All I have to say is come tomorrow morning things had better change as I'm taking the boys to a library music and dancing hour and have been looking forward to it for a couple of weeks now!

I just wanted to give an update on the recipe collection........... If you take a look, we've had an excellent week!!!! Thank you so much to all those that have contributed this week as well as previously! This week's recipe contribution "gold star" for the most recipes contributed goes to Cindy! Thank you!!!

We hope to have 175 recipes by April 1 and begin selling cookbooks on/by my 26th birthday of May 30!!!! Hey. If I'm not going to have a baby, or by the looks of it pregnant either by then, I need something to look forward to! :-)

So would you help us get to this goal of needing 59 more recipes!?!?

I'm off to down more TheraFlu and doze in and out on the couch until it's officially bed time. Hope everyone had a fantastic weekend!

Ok, here's 1 dessert and 1 appetizer recipe. And I'll post on my blog about your request to help get the word out! :)

I will also send a request via email to my family/friends asking for some -- I have family who LOVES to cook!!

Ok, 1st one is an appetizer and my very fave:
"Onion Souflee'"
Ingredients:
3 10oz bags frozen chopped onions
3 8oz cream cheese @ room temp
1/2c mayo
2c shredded parmesean cheese
(hold 1/2c parmesean for top)

Preheat Oven @ 425

Blend all ingredients with electric mixer. Pour into deep oven-safe dish. Sprinkle remaining 1/2c parmesean cheese on top and bake for 25-30 minutes. Cheese on top will become brown & bubbly.

Enjoy with your favorite crackers. It is best when HOT from the oven!!

Fluffy Fruit Pie
1 pkg Cool Whip
1 pkg Cream Cheese (8oz)
1/2 c Powdered 10x Sugar
Store Bought Graham Cracker Pie Crust
Fresh Fruit of your choice (Strawberries are yummy!)

Blend Cool Whip, Cream Cheese & Powdered Sugar thoroughly. Pour mixture over pie crust and top with fresh fruit. Voila! Enjoy :)

Ok girl, I have several more recipes for you:

Neiman Marcus Cookies (Recipe may be halved)



2 cups butter

4 cups flour

2 tsp soda

2 cups sugar

5 cups blended oatmeal

24 oz chocolate chips

2 cups brown sugar

1 tsp salt

1 8oz Hershey Bar (grated)

4 eggs

2 tsp baking powder

2 tsp vanilla

3 chps chopped nuts (you choice)



Measure oatmeal and blend in a blender to a fine powder

Cream the butter and both sugars

Add eggs and vanilla, mix together with flour oatmean, sal baking powder and soda

Add chocolate chips, Hershey Bar and nuts

Roll into balls and place two inches apart on a cookie sheet

Bake for 10 minutes at 375

Makes 112 cookies

Manicotti

A package of manicotti’s,

30 oz of ricotta

2 ½ cups of Mozzarella Cheese

1 ¼ cup Parmesan Cheese

1 egg

Pinch of salt

1 Jar of Spaghetti sauce.

Any seasonings you may want to add.



Boil the manicotti’s for 8-10 minutes using the salt to keep them from sticking.



Mix the ricotta, 1 ¾ cup of mozzarella, ¾ cup parmesan and the egg in a large bowl.



Drain manicotti’s and let them cool down.



Put half of the jar of spaghetti sauce on the bottom of a 11x13 bake dish. Stuff manicottis and place them on top of the sauce.



Cover manicottis with the rest of the sauce then top with the rest of the mozzarella and parmesan.



Cover with tin foil and bake on 375 for 30 minutes. Remove tin foil and continue to back until cheese is lightly brown on top.

Pineapple Chicken

1 bottle of Catalina Salad Dressing

1 packed of dried onion soup mix

1 jar of Pineapple Preserves

4-6 chicken breast bone in (if you prefer without bone you just don’t cook it as long)



Preheat oven to 350



Mix together Salad dressing, onion soup, & pineapple preserves in a bowl. Spray pan and place chicken in the pan. Pour mixture over the chicken. Cook for 50 minutes or until the top of the chicken is golden brown. I like to take the chicken out half way through and coat the chicken with the sauce.

Hello! Here is a bread recipe:

Strawberry Bread:

3 cups sliced sweetened strawberries or 2 10oz pkg of frozen/thawed strawberries.

4 eggs
1 1/4 c veg oil
3 c flour
2 c sugar
1 tbspn cinnamon
1 tspn baking soda
1 c walnuts (if desired)

Preheat oven to 350 degrees. Grease 2 9X5 inch pans or 6 6X3 inch pans.

In Bowl, combine strawberries, eggs & oil.

In Large bowl, combine flour, sugar, cinnamon, baking soda and nuts (if desired). Add in the wet ingredients to the dry one and blend.

Bake 1 hour for 9X5 pans or 45 minutes for the 6X3 pans.
